We made these simple pineapple fritters in a sweet beer batter using Asahi lager. The effervescence of the lager gives a lovely light batter. Serve it with lemon ice cream and a chilled glass of Asahi for a simple, even impromptu, pudding that will be sure to impress.

This is the ultimate fish pie, topped with pea mash it is good on its own, or for the height of luxury serve with some steamed mussels with garlic or some simple wilted greens. The sauce is made with Whitstable Bay Blonde lager, which also makes a great drinking accompaniment. The fish is not cooked through in advance which leaves it succulent and moist in the finished pie.
