Featured Recipe: Pork Belly and Haggis Croquettes

These delicious croquettes are easy to prepare and make an unusual seasonal dish that is a warming light lunch, a great starter or tapas dish.

Serves 5 as a starter or light lunch

Ingredients:
200g minced pork belly
Freshly ground pepper & salt
200g haggis
100g fresh breadcrumbs
400g mashed potato
Oil for frying

Method:
1/ Preheat the oven to 200˚c.
 
2/ Put the haggis in a food processor and whizz until finely chopped. Add the pork mince and blitz until evenly mixed. Transfer to a bowl and mix with the mashed potato until smooth.
 
3/ Using floured hands, shape the mixture into 10 croquettes and then roll in the breadcrumbs. Refrigerate to firm up until required.
 
4/ Heat some vegetable oil in a non-stick pan and fry the croquettes on each side for 3 to 4 minutes until crisp and golden. Leave in the oven to rest until required and then serve with a green salad and a homemade cranberry sauce.
