Featured Recipe: Pear Poached in Rosé Wine with Raspberries and Star Anise

A stunning dessert that is low in calories, gluten and dairy free!

Preparation time: 30 min
Cooking time: 20 min plus churning time
Serves 4

1 bottle of rose wine
5 pears (use Beurre Bosc pears if possible)
1 vanilla pod
1 cinnamon stick
1 star anise
200 g caster sugar
200g fresh raspberries
50g icing sugar 

1/ Peel the pears leaving the stalks attached and slice off the bottom so they sit evenly and upright on a surface. Using an apple corer or small knife remove the main bulk of the cores without ruining the outer shape of the pears.
2/ Place the wine, vanilla, sugar, star anise and cinnamon into a saucepan, heat until warm, then add the pears and poach on low heat for 30-40mins or until pears are soft. Allow the pears to cool in the liquid.

3/ Once cooled remove the pears and set aside. Strain the liquid to remove the cinnamon and vanilla, then pour it back into the pan and reduce by 1/3. Add half the raspberries and puree with a hand blender and sweeten to taste with the icing sugar. Pour over the pears to serve, garnished with the remaining fresh raspberries.
