Featured Recipe: Mozzarella and Cherry Tomato Pot

Simple salad starters or snacks served in jar jars or kilner jars look great on wooden boards with some rustic bread and can be prepared in advance and stored in the fridge until required. Try variations with roasted vegetables, pasta, steamed asparagus, quails eggs… the possibilities are endless. They also make great picnic basket additions.

1 tbsp extra virgin olive oil
5g fresh basil leaves
1 tbsp red pesto
75g black olives pitted
250g Mozzarella pearls
25g chopped chives
150g cherry plum tomatoes, halved
50g baby salad leaves
Salt and black pepper

1/ In a bowl, whisk together the olive oil, red pesto and balsamic vinegar to make the dressing.
2/ In a bowl mix the tomatoes, mozzarella, olives and chopped herbs. Season with salt and pepper.
3/ Put some salad leaves in the bottom of each jar. Top with the mozzarella and tomato mix and drizzle over the dressing. Tip: if you are storing the jars in the fridge to serve later, do not add the dressing until the you are ready to serve.
