Featured Recipe: King Prawn Skewers

King prawns on skewers, stuffed with Thai spices. Ideal for barbecuing or as a starter with mixed leaves and citrus mayo.

Cooking time: 10 min
Serves 12

24 large king prawns in shell        
1 tbsp chopped coriander            
1 red chilli, deseeded                    
1 tsp finely chopped lemongrass
1 tsp grated ginger
Juice of 1 lime
2 tbsp softened butter

1/ Preheat the oven to 190˚c
2/ Mix all the filling ingredients together in a bowl to form a smooth paste.
3/ Soak 24 long wooden skewers in cold water for 30 minutes. Insert a skewer lengthways through each prawn, starting at the tail end and pushing carefully up through the body and out of the top of the head.
4/ Carefully make a slit along the belly of each prawn and fill the slit with the herb paste. Smear some of the paste on the outside of the prawn as well.
5/ Place the prawns on a baking tray and bake in the oven until cooked through. Drizzle the pan juices over to serve. Alternatively you can cook them on a barbecue or griddle pan. Take care to make sure the skewers are not in contact with the pan or barbecue as they will burn.
