This warming soup is delicious with a gruyere crouton or warm crusty bread on a cold autumn day. Use a full flavoured brown beer like Bishops Finger for real treat.
Preparation time: 20 min, Cooking time: 1 hr 40 min, Serves 4.
1 kg Thin Sliced Onions
400ml Beer preferably Bishops Finger
1 tsp Clear Honey
1. Heat a heavy pan on a medium heat.
2. Melt the butter until foaming, add the onions, reduce the heat to low and cook slowly for 1 hour, stirring occasionally to achieve deep golden brown caramel.
3. Add the beer, honey and beef stock, simmer for a further 30 minutes and season.
